Ginger Milk Curds

It has been raining all day and it let me make up my mind to make a dessert which can let me stay warm in this cold weather. ‘Ginger’, the first thing that I can think of right now. As we know, ginger has a variety of health benefits for people, especially for women such as reduce muscle pain and soreness, drastically lower blood sugars, treat chronic indigestion, reduce menstrual pain, lower cholesterol levels and so forth. So I decided to make a simple yet quick dessert which is Ginger Milk Curd and this dish only needs 20 minutes to be done.

Ginger Milk Curd is a Chinese hot dessert originated in Shunde District. The recipe of Ginger Milk Curds is very simple which is only need some ginger, milk, and sugar. Even though the ingredients are simple, but the temperature and the timing are the most important points for this dessert. Ginger can brighten and lighten up the taste for the puddings and I’m sure that you will enjoy every bite if you are a ginger lover!

How to make a Ginger Milk Curd:

  1. Cut a piece of old ginger into small pieces and grind the ginger to fine. Old ginger is better than young ginger in this dessert as old ginger tends to be spicier and it can brighten the taste of the curds.
  2. Squeeze the juice out by pressing the ginger through a sieve. Then put the juice into a small bowl or cup.
  3. Pour the milk into a pot and boil it. In the meantime, dissolve some sugar into it. (The volume of sugar is up to the preferences of you, can be more or less)
  4. The best temperature to boil the milk is between 60-80 degrees. (More or less will affects the result of curd.)
  5. After that, pour the milk quickly into the middle of the ginger juice and wait for 5 to 10 minutes to wait for it curd.
  6. Put the spoon on the curd to test the result of the puddings.
