Malaysia is a tropical country with average temperatures of 36 Celsius. That’s why even during the summer in the UK, it still feels like I’m stuck in a fridge. On days where I feel particularly warm though, I miss the Chinese red bean soup my mother used to make. I think I’ll go make some.

How to make a Red Bean Soup:
- Soak the red beans in cold water for 3 hours.
- Discard the soaking water, then put the beans in a pot and pour water in until 80%of pot. Bring to a boil, then add orange zest then reduce heat to low and simmer for 1 hour, stirring occasionally.
- Add sugar, then stir until the sugar is dissolved.
- During the last phase of simmering, add up to 1 cup of additional water to achieve your desired consistency.
You can add more sugar if you prefer sweeter. This way is not too complicated and difficult. Hope you guys can enjoy.
